Hidden in the middle of the Landes forest, L’Esturgeonnière aquaculture farm that produces Perlita Caviar has existed since the early 1990s. As one of the three pioneer companies in this sector, it is the only one in France to have been built from scratch for sturgeon farming. At that time, the activity was focused on the production of sturgeon meat and not caviar.
Over the course of its 25 years of existence, important work was carried out in order to develop the caviar production capacity and to make traceability a priority for the company: 4 tons were produced two years later.
